This traditional Russian honey cake features six delicate layers of sponge infused with deep, caramelised burnt honey, folded gently into the dough for a uniquely rich flavour and tender crumb. The filling is made from dulce de leche slow-cooked for five hours, then combined with sour cream to create the perfect balance of sweetness and tang.

Each cake is rested for 12 hours before serving, allowing the cream to fully soak into the sponge, resulting in a melt-in-the-mouth texture that’s unforgettable.
