Whether you're an ambitious home baker or preparing for a professional path, this immersive course offers personalised pastry training in a real working bakery. Across two full days, you’ll receive expert hands-on guidance as you create three impressive bakes:

What You’ll Learn – Choose Your 3 Core Bakes
✔️ One Dough (choose one):
- Croissant Dough – Make croissants, pain au chocolat, and fruit danishes using hand-laminated dough. Learn lamination, shaping, proofing, and baking to perfection.
- Puff Pastry – Create savoury bakery favourites like meaty sausage rolls and cheese puffs. Master classic lamination techniques and learn how to work with savoury fillings.
- Brioche Dough – Learn to work with rich, buttery dough to make soft cinnamon brioche buns and our signature ricotta brioche.
✔️ One Celebration Cake:
- Learn how to layer, fill, and finish an elegant celebration cake in your chosen flavour (e.g. chocolate, raspberry, lemon, vanilla).
- You’ll decorate it with beautifully tempered chocolate flowers, learning piping, smoothing, and finishing skills along the way.
✔️ One Entremet:
- Build a refined, patisserie-style entremet with at least three professional elements – such as mousse, sponge, insert, glaze, or crunch layer.
- Learn how to glaze, unmould, and finish your entremet with precision and elegance.
